The Diane
/Sunshines Mother likes sweet blendy cruise ship style drinks. But, Sunshine doesn’t like to make them. Messy. Too sweet. Not enough alcohol.
To solve this problem, The Diane is a version of a Piña Colada with some extra rum and a tablespoon of cherry juice. The addition of cherry juice comes from Grandpa Al, who used to make something similar, but added the cherry juice to make a more festive pink Piña Colada.
In a good blender (high power), combine the following:
2.5oz Light Jamaican Rum or other white rum with sweet sugary notes
1/4 cup Coco Lopez
1/2 cup cubed pineapple
1.5 cup crushed ice
1 Tbsp Cherry syrup from the cherry jar
Blend Blend Blend. Pour into fancy tall cocktail glass and garnish with fresh pineapple, fresh or jarred cherries and optional whip cream.
Have you tried the Trader Joe’s Amarena Cherries? 30% the cost of Italian Marschinos but just as delicious. We use the syrup from these cherries in this drink. Never toss the syrup, save it for drinks.
