Baja Aloha

Aloha and Bienvenidos!  This was our signature drink at Tiki Oasis 2011.  The theme of the weekend was "South of the Border" and we wanted our drink to capture that feeling.  In addition to being one of our most popular drinks served at a room crawl, Sunshine was featured on Lost in Paradise making this very cocktail.  The homemade (and easy to make) Lemon Chamomile mix used in this recipe is also good in margaritas and many other drinks.  Keep some on hand all Summer.  

.75 oz Appleton Estate Reserve

1 oz Damiana

.75 ounce Tequila Gold

.3 oz Passoa (Passion fruit liquor)

1 Dash Lemon Bitters

1.5 oz Lemon Chamomile Mix*

1 oz Pineapple Juice

Combine all with cracked or crushed ice in a mixing glass.  Strain into double rocks glass filled with crushed ice and garnish with a lime wedge and Mexican flag pick.   

*Lemon Chamomile Mix

1 cup Very Strong Chomomile Tea (about 6 tea bags) 

2 cups Lemon Juice (fresh squeezed only) 

1 cup Raw Sugar or Light Brown

2 ounces High Proof Rum (optional to preserve) 

Brew tea.  Mix in sugar and stir until well dissolved.  Add lemon juice.  If you add the rum, the combination of alcohol and acid in the citrus will help this keep in the refrigerator for about a month.  Strain lemon juice if you prefer a smooth mix.
